Yellow and Green Cheesy Zucchini Tart
INGREDIENTS (serves 6-8)
Crust
¾ cup spelt flour 1/3 cup whole wheat flour ½ tsp baking powder ¼ tsp salt 2 tbsp extra-virgin olive oil 1/3 cup buttermilk 1 egg
Cheese “Flan”
200g 1% fat cottage cheese ¾ cup buttermilk 2 whole eggs 4 egg whites Juice of one lime 1 tsp salt ¼ tsp black pepper 1 tsp dried basil
Filling
2-3 yellow courgettes, thinly sliced 2-3 green courgettes, thinly sliced 75g soft goat cheese, crumbled 50g crushed walnuts
Garnish
20g soft goat cheese, crumbled 25g crushed walnuts
INSTRUCTIONS
Crust
Whisk flours, baking powder and salt in a bowl. In a measuring cup, whisk oil, buttermilk and egg; pour over flour. Stir to form fairly smooth dough. On floured surface, knead until smooth, 2 minutes. Press into disc; wrap and refrigerate for at least 30 minutes. On floured surface, roll out dough to form a 12-13 inch disc. Fit into a deep tart pan with removable bottom and set aside.
Cheese “Flan” and filling
Preheat oven to 375F In a food processor, blend cottage cheese until smooth. Add buttermilk, eggs, egg whites and seasoning and process again until well incorporated. Set aside. Arrange some zucchini slices in a circle at the bottom of the reserved pie crust. Sprinkle a little bit of salt and pepper, then some of the goat cheese and walnuts. Continue layering the zucchinis, sprinkling with salt, pepper, cheese and walnuts between each layer, until you have room for just one more layer. Carefully pour the flan mixture mixture over the zucchinis. Top with a final layer of zucchinis, making it as pretty as you can. Immediately put the tart in the oven and lower temperature to 325F. Cook for 55-60 minutes, until tart is set. Allow tart to cool completely in the refrigerator before removing from pan, preferably overnight. Sprinkle with crumbled goat cheese and crushed walnuts right before serving.
Arrange the zucchinis in pretty layers and sprinkle goat cheese, walnuts, salt and pepper between each layer
Fresh out of the oven. Make sure you make that final layer extra pretty!
When tart is nice and cool, garnish with crumbled goat cheese and crushed walnuts
Garnish with more walnuts and a few sprigs of watercress
